The foundation of the business, Welsh whisky is aged in previously used barrels; ex European fortified wine barrels for malt and ex bourbon barrels for grain. They currently release around two casks a year so availability is limited and always in demand. On the nose membrillo, with twists of oily orange peel, toffee, and stone fruits, on the palate fruit cake, nutmeg, and some tropical elements underneath as well as prickles of pepper. On the finish sweet raisins linger.
